✨ Coffee Cottage Cheese Dessert

Ingredients:

▫️ Soft cottage cheese — 500 g

▫️ Gelatin — 25 g

▫️ Water (for gelatin) — 50 ml

▫️ Instant coffee — 1 tsp

▫️ Cocoa powder — 1 tsp

▫️ Boiling water — 300 ml

▫️ Sugar 2 tbsp or sweetener to taste

In a small bowl, pour cold water over the gelatin and let it sit for 10 minutes to bloom.

In a separate glass, mix coffee and cocoa, pour in boiling water, and stir well. Let the mixture cool to a warm temperature.

Gently heat the bloomed gelatin in a water bath or microwave (in short bursts) until fully dissolved. Do not bring to a boil!

Add sugar (or a substitute) and the warm gelatin solution to the cooled coffee-cocoa mixture. Stir well.

Blend the cottage cheese until smooth and creamy. Slowly pour the coffee-gelatin mixture into the cottage cheese in a thin stream while blending until completely uniform.

Pour the mixture into molds. Tap lightly to remove any air bubbles.
Refrigerate for at least 4 hours until fully set.

Garnish to taste with grated chocolate, fruits, jam, or mint.

4 cups Chestnut Mushrooms

1 sprig fresh thyme

4 cups puff pastry

8 slices Parma ham

2 egg yolks

beaten with 1 tbsp water and a pinch of salt

Sea salt and freshly ground black pepper

Beef Wellington

2 tbsp olive oil

7 oz beef trimmings

4 large shallots ( peeled and sliced )

12 black peppercorns

1 bay leaf

1 sprig fresh thyme

Splash of red wine vinegar

3 cups red wine

3 cups beef stock
