👉 Useful Tips:
1. Choose good-quality sausages. Meatier ones give a richer flavor.
2. Don’t cut too deep. Otherwise, the boat will fall apart.
3. Use tongs or toothpicks. If you don’t have tongs, secure the edges with toothpicks.
4. Swap the veggies. Bell pepper or mushrooms work great instead of tomato.
5. Adjust the yolk to your taste. Keep it runny by skipping the lid, or set it firmer by cooking a bit longer.
6. Make it lighter. Fry with just a drop of oil or on a non-stick pan without butter.
7. Top with cheese. A sprinkle of grated cheese on top makes it extra tasty.

🔪 Chop the onion into small cubes, dice the tomato.

Slice the sausage lengthwise without cutting through the edges, so it holds a boat shape.

Separate the yolk from the white. Mix the white with onion, tomato, and a pinch of salt.

Melt butter in a pan. Fix the sausage with tongs to keep its shape, pour in the egg white mixture, and cook for 2–3 minutes. Remove the tongs, flip, and cook for another 2 minutes.

Flip back to the top side. Place the yolk on top (whole or spread it). Optionally cover with a lid for 30 seconds to set the yolk slightly.

Sprinkle with chopped green onion and serve hot.

4 cups Chestnut Mushrooms
1 sprig fresh thyme
4 cups puff pastry
8 slices Parma ham
2 egg yolks
beaten with 1 tbsp water and a pinch of salt
Sea salt and freshly ground black pepper

2 tbsp olive oil
7 oz beef trimmings
4 large shallots ( peeled and sliced )
12 black peppercorns
1 bay leaf
1 sprig fresh thyme
Splash of red wine vinegar
3 cups red wine
3 cups beef stock
