🍝 Baked Pasta with Vegetables and Cheese

A simple and filling dinner with zero fuss! Spaghetti, tomatoes, onion, garlic, and cheese bake together in one dish. Minimal effort — maximum flavor.

Ingredients:
▫️ Spaghetti – 250 g
▫️ Tomatoes (cherry or regular) – 200 g
▫️ 1 small red onion
▫️ 2–3 garlic cloves
▫️ Tomato paste – 3 tbsp
▫️ Water – 200 ml
▫️ Olive oil – 2 tbsp
▫️ Cheese (mozzarella or your favorite) – 100 g
▫️ Salt & black pepper – to taste

👉 Tips:
🔥 If pasta feels too firm, add 50–70 ml more water.
🧀 Use a cheese mix (mozzarella + parmesan works great).
🌱 Add fresh basil or oregano for extra flavor.
Notes

Preheat the oven to 180 °C (350 °F). Place spaghetti in a baking dish.

Chop tomatoes into medium pieces, slice onion thinly, mince garlic. Add on top of the pasta, add olive oil, salt, and pepper

Mix tomato paste with water until smooth. Pour over the pasta. Stir gently so the liquid spreads between the spaghetti.

Sprinkle with half of the cheese. Cover with foil and bake for 30–35 minutes.

Remove foil, add the rest of the cheese, and bake another 10 minutes until golden and bubbly.

Mix gently and serve hot. Perfect with fresh herbs or a side salad.

4 cups Chestnut Mushrooms
1 sprig fresh thyme
4 cups puff pastry
8 slices Parma ham
2 egg yolks
beaten with 1 tbsp water and a pinch of salt
Sea salt and freshly ground black pepper
Beef Wellington
2 tbsp olive oil
7 oz beef trimmings
4 large shallots ( peeled and sliced )
12 black peppercorns
1 bay leaf
1 sprig fresh thyme
Splash of red wine vinegar
3 cups red wine
3 cups beef stock
Red Wine Sauce
