Ingredients:

ā–«ļø 500 g ground meat (I used beef)

ā–«ļø 800 g white cabbage

ā–«ļø 1 medium onion (about 100 g)

ā–«ļø 1 medium carrot (about 150 g)

ā–«ļø 1 tbsp olive oil

ā–«ļø 2 tbsp tomato paste

ā–«ļø 200 ml water

ā–«ļø Salt, pepper, and spices — to taste

šŸ‘‰ Advice:

To avoid excess liquid: keep the lid off for the last 5–7 minutes to let the moisture evaporate.

For deeper flavor: add garlic, smoked paprika, or a splash of soy sauce.

For a lighter version: use ground turkey or chicken and skip the oil if using a non-stick pan.

Vegetarian alternative: replace meat with beans or mushrooms for a hearty plant-based version.

For more color: add a bit of sweet pepper or swap tomato paste for ketchup.

Serving idea: best enjoyed hot, with a spoon of sour cream and fresh herbs on top.

Heat olive oil in a large pan and sautƩ the onion until soft and translucent.
Add the grated carrot and cook for 3–4 minutes, stirring occasionally.

Add the ground meat, break up any clumps, and fry for 6–7 minutes until lightly browned.

Add cabbage, salt, pour in tomato paste diluted with water

Pour in hot water, cover with a lid, and simmer on low heat for 25–30 minutes, stirring every 5 minutes.
The cabbage should decrease in volume and become soft, and the liquid should partially evaporate.

Taste, adjust seasoning if needed, and serve hot — ideally with sour cream.

4 cups Chestnut Mushrooms

1 sprig fresh thyme

4 cups puff pastry

8 slices Parma ham

2 egg yolks

beaten with 1 tbsp water and a pinch of salt

Sea salt and freshly ground black pepper

Beef Wellington

2 tbsp olive oil

7 oz beef trimmings

4 large shallots ( peeled and sliced )

12 black peppercorns

1 bay leaf

1 sprig fresh thyme

Splash of red wine vinegar

3 cups red wine

3 cups beef stock
