🥗Beetroot Salad with a Georgian Twist

Healthy, aromatic and easy beetroot salad with walnuts, herbs & spices. Perfect for dinner 🍷

Ingredients:

▫️ 3 pcs beets (about 600 g)

▫️ 1 pc red onion

▫️ 100 g walnuts

▫️ Cilantro, dill, parsley — to taste (around 30–40 g)

▫️ 2 cloves garlic

▫️ ½ tsp paprika

▫️ ½ tsp khmeli-suneli


For the dressing:

▫️ 2–3 tbsp Olive oil

▫️ 1–2 tbsp Lemon juice

▫️ Salt, black pepper — to taste

👉 Useful notes:

exture: To soften the onion, soak it in cold water for 5 minutes, then drain—it will be milder without losing flavor.

Acidity: Balance with lemon juice—beets “love” bright acidity.

Storage: Store in an airtight container in the fridge for up to 24 hours. Before serving, mix again and, if needed, add a touch more oil or lemon juice.

Preheat the oven to 190 °C / 375 °F. Wash and dry the beets, wrap each one in foil, and place on a baking sheet. Roast for ~1 hour 30 minutes until tender (a skewer should slide in easily). Let cool.

Slice the onion into thin half-rings. Finely chop the herbs. Mince the garlic.
Chop the walnuts into small crumbs using a blender or a knife.
Peel the cooled beets and cut into 1–1.5 cm cubes.

In a large bowl, combine the beets, onion, walnut paste, herbs. Add lemon juice and olive oil , then season with khmeli-suneli and black pepper. Gently mix with a spatula.
Leave for 1 hour

4 cups puff pastry

8 slices Parma ham

2 egg yolks

beaten with 1 tbsp water and a pinch of salt

Sea salt and freshly ground black pepper

Beef Wellington

2 tbsp olive oil

7 oz beef trimmings

4 large shallots ( peeled and sliced )

12 black peppercorns

1 bay leaf

1 sprig fresh thyme

Splash of red wine vinegar

3 cups red wine

3 cups beef stock
