Ingredients:

ā–«ļø Cucumbers — 500 g

ā–«ļø Broccoli — 300 g

ā–«ļø Avocado — 1 pc.

ā–«ļø Green onions — 4–5 feathers

ā–«ļø Walnuts or pistachios — 1 tbsp.

ā–«ļø Garlic — 2–3 cloves


Dressing:

ā–«ļø Sour cream — 1 tsp

ā–«ļø Mayonnaise — 1 tsp

ā–«ļø Dijon mustard — 1 tsp

ā–«ļø Lime juice and zest — 1–2 pcs.

ā–«ļø Salt to taste

Tips and options

Want a softer texture? Blanch the cauliflower for 1 minute in boiling water and quickly cool in ice water — then finely chop.

For a lighter version, replace the mayo with extra sour cream or thick yogurt.

Lime can be substituted for lemon; for a touch of sweetness, add ½ teaspoon honey to the dressing.

Cut cucumbers into thin rings/half rings. Separate broccoli and chop very finely (almost crumbs). Cut avocado into cubes. Finely chop green onions.

In a bowl, combine sour cream, mayonnaise and Dijon mustard. Add grated/pressed garlic, lime zest (optional) and lime juice. Season with salt and a little pepper. If the sauce is too thick, add 1-2 teaspoons of water or a little more lime juice. Taste and adjust the salt/acidity.

In a large bowl, combine cucumbers, cauliflower, green onions, avocado and nuts.

Pour the sauce over, stir and serve!

4 large shallots ( peeled and sliced )

12 black peppercorns

1 bay leaf

1 sprig fresh thyme

Splash of red wine vinegar

3 cups red wine

3 cups beef stock
